Griselda Nimia Rioja Tarrillo is a dedicated female coffee producer from Perlamayo, a remote area in the Huabal District of Peru's Cajamarca Region. She carefully cultivates Caturra and Bourbon varieties on her two farms, El Barejon and La Piedra, each spanning just 2 hectares at an elevation of 1900 meters.
As a woman in coffee farming, Griselda’s dedication to quality and sustainable agriculture highlights the important role of female producers in the industry. Her meticulous post-harvest processing methods ensure her coffee reaches its full potential, creating a cup profile that reflects the rich terroir of her land.
Unique Processing for Outstanding Flavour
Griselda follows a careful process to bring out the best flavours in her coffee:
- Harvesting: Coffee cherries are selectively handpicked at peak ripeness.
- Resting Period: Cherries rest for 24 to 40 hours after harvest to enhance fermentation.
- Pulping & Fermentation: The cherries are pulped, and beans ferment in bags for approximately 24 hours.
- Washing: The beans are washed twice to remove any remaining mucilage.
- Drying: The beans are dried for around 30 days on raised beds and tarpaulins, ensuring even moisture distribution.
