This decaf brings together two of Chiapas's most celebrated coffee-growing communities - the Capitán Luis A. Vidal cooperative from the Jaltenango highlands, and La Unión Majomut, a non-profit uniting around 610 indigenous families across 35 Tzotzil and Tzeltal communities in Los Altos de Chiapas. Every producer behind this coffee speaks Tzeltal or Tzotzil, and their relationship with the land runs deep.

La Unión Majomut is particularly remarkable in that its work extends well beyond coffee. It runs programmes for dignified housing, food self-sufficiency, women's productive organisation, and a rural micro-bank supporting the local solidarity economy - a reminder that buying this coffee supports something much larger than a single harvest.

Both communities farm using traditional "Rusticano" polyculture systems, where coffee grows beneath a mixed canopy of trees and fruit species at 1,000–1,800 metres. This ancestral approach builds resilience against disease, supports biodiversity, captures carbon, and produces higher quality coffee. The farms sit in the shadow of the El Triunfo Biosphere Reserve - a UNESCO-protected area preserving 10 of Mexico's 19 vegetation types, including cloud forest and rainforest. Chiapas is Mexico's largest organic coffee producer, and every bean here is grown entirely free from agrochemicals.

The decaffeination is handled with the same care. The Mountain Water Decaf process, developed by Descamex in Veracruz, uses pure glacial water from the Pico de Orizaba to remove up to 99% of caffeine - no chemicals, no compromise on flavour. The result is a clean, balanced cup that's as considered in process as it is in origin.
